Temperature-cooked turbot, Japanese lemon "yuzu" cream sauce,
abalone, mushroom duxelle, yuzu zest, amaranth


Pan-fried lobster, vanilla lobster sauce,
vanilla tuiles, fennel purée, sea fennel, tagete flower


Roast "wagyu" Japanese beef,
port sauce, black truffle, truffle mashed potatoes
