Ideally located in the heart of Paris's sixth arrondissement, a stone's throw from the church of St Germain des Prés, Shiro - Japanese for "white" - is a restaurant designed to delight fans of fusion cuisine. Blending French gastronomy with Japanese influences.
The ground-floor dining room opens onto a large marble counter overlooking an open kitchen, where the sounds of cooking utensils clatter and the Chef works his noble products.
Chef Hiroyuki Ushiro was born in Yamaguchi, a small Japanese village by the sea. His earliest culinary memories revolve around dishes based for the most part around freshly caught fish. He grew up surrounded by local, seasonal produce. This was to inspire him and shape his cuisine throughout his career.
For the Shiro restaurant, the chef wants to offer an inventive cuisine that reflects his career. A blend of techniques and fresh French and Japanese produce. His aim is to create a harmony of colors and tastes in each of his dishes, in order to surprise by reconciling the cuisine of his origins with that of which he fell in love in his youth, French gastronomy.
